Gluten-free French Bread, Take 1

We made an attempt at gluten-free French bread today. The recipe used was included in the ’97 Joy of Cooking which surprisingly had a little section on gluten-free breads!

It was certainly interesting to make — it kind of foamed, but it certainly had that “yeast-y” smell that characterizes bread.


The result was good — BUT it clearly had that gluten-free taste to it. Our goal is to make gluten-free bread that tastes like regular bread. We still have a while to go.
